Cottage Cheese Pancakes

Ingredients:

– 1 cup cottage cheese
– 1/3 cup whole wheat flour
– 2 tablespoons vegetable oil
– 3 eggs, beaten
– cooking spray

Directions:
– Combine cottage cheese, flour, oil and eggs in a large bowl
– Place pan over medium heat and coat with cooking spray.
– Pour 1/3 cup batter onto pan and cook about 2 minutes per side, or until golden.
